Chemical and physical properties of foods; issues pertaining to safety, food-diet-health relationship; government regulations pertaining to food safety, quality and additives; preservation techniques and transformation of agricultural commodities to food products; Food facts, myths, and practices that are important for making intelligent food decisions. Course may also be offered for dual credit with cooperating Indiana high schools upon documented approval by the Department of Food Science.
