Demonstrate knowledge of foundational scientific concepts. 2. Comprehend, interpret and apply knowledge on biochemistry and physiology emphasizing lipids and antioxidants in the context of cardiovascular and immune systems and cancer. 3. Develop knowledge, in depth, on important and current issues in nutrition. 4. Develop knowledge of and learn to apply research methods used in nutrition, including biochemical and molecular analyses, preclinical and clinical study designs, and epidemiological approaches. 5. Reinforce intellectual skills important to careers in nutrition and animal science, e.g., critical thinking skills, reading, discussing, and interpreting current scientific literature, scientific presentation skills.
